Beetroot Thin Crust Wheat Pizza

 1.5 cup whole wheat flour
  1 cup fine semolina/ more whole wheat flour
 2 beetroots
 2 cups water for boiling beetroot
 3/4 tsp instant yeast
 1 spoon khandsari sugar
 1.5 tsp salt
 1 tbsp oil

Boil beetroot in water till it is cooked.

Once they are cooked, let cool a bit. Keep the water in reserve as this will lend beautiful red colour to the pizza.

Blend beetroot in pulsar with little red water ( which we reserved in the previous step).

Take sweetener and yeast and mix in 1/2 cup warm beetroot water.

Take flour , semolina , sugar and mix well.

Make a well in the centre, pour dissolved yeast into the well.

Add warm beetroot puree and mix everything well. Add oil and more beetroot water to make a smooth dough. I added 1/2 cup beetroot puree and 1/2 cup more beetroot water in addition to the dissolved yeast. ( so in all about 1.5 to 1 cup plus 3/4 cup of liquids is required)

Make a smooth and soft dough by kneading it for 10 minutes.

Brush oil in the bowl and add on top of dough, cover and keep in warm place for 30 minutes.

During last 10 minutes of resting , preheat oven at 250 degree C or at the highest temperature in your oven. It should be well heated before placing pizza in the oven.

Sprinkle dry flour in a clean surface or silicon mat, divide dough into three portions.

Roll one portion using belan or rolling pin. Roll it thin to make thin crust or thick if you want normal pizza.( I made a medium thin crust pizza and one regular pizza for my daughter)

Grease the pizza pan with oil. Place the pizza in the pan and gently flatten it using hands to cover the whole pan.

Prick it using fork Place the thin crust pizza on a lower rack with both rods on or convention mode and bake for 8 minutes.

Take that out and brush olive oil on top of crust.
Now spread pizza sauce , grated cheese and veggies of choice. Sprinkle salt , pepper and oregano on top.

Bake it again on the lower rack for 10 minutes or till the cheese is melted and brown spots appear on top.

Remove from oven and Let it rest for a minute
Transfer in the serving tray and enjoy the pizza
