Baked Gulgula Cup Cakes

 1 cup and 1/4 cup and 2 tbsp whole wheat flour
 2 tbsp custard powder
  1/2 tsp Cardamom powder
 1/2 tsp fennel seeds
 1 tsp baking soda
 1/8 tsp baking powder
 1/2 tsp vanilla extract
 1 tbsp honey
 1 cup water
 1 cup plus 1/3 cup jaggery powder

Preheat oven at 180 degree Celsius.

In a vessel heat water and dissolve jaggery powder in it.

Add in Cardamom seeds and vanilla extract.Let it come to room temperature.

In a bowl mix all dry ingredients that is whole wheat flour, baking soda and powder.

Sieve these dry ingredients into the jaggery water in batches of three and beat after every batch.

Mix well but do not overbeat.

Lastly add Fennel seeds and mix. Grease cup cake mould with ghee and sprinkle whole wheat flour on all sides.

Pour batter into cup cake moulds and bake at 180 degree C for 30 minutes or toothpick comes out clean when inserted in the centre.

Remove from oven and demould after 10 minutes.

Brush honey on top and sprinkle jaggery powder if needed.

It tastes best when warm.
