Baked Samosa Roll – with whole wheat

Who does not love Samosa in India! The baked version of the samosa is quite popular these days. I wanted to try baked samosa but in a different way . I therefore made a giant roll and then baked it like a cake and cut it in pieces. As always, i used whole wheat flour for the recipe .

Ingredients:-
For dough
 1 cup and 3/4 cup aata
 1/4 cup sooji
 Salt to taste
 2 pinches of ajwain or Carom seeds
 4 to 6 tsp of melted ghee or oil (for moin)
 Water to knead
For filling-
 3 boiled potatoes
 1 tbsp oil
 1 inch ginger
 2 green chillies
 50 grams of paneer or cottage cheese
  masalas and seasonings turmeric powder, coriander powder salt , black salt, red chilli powder, garam masala and chaat masala.

Instructions:-
1

For dough

1. In a bowl take aata , sooji salt and ajwain.
2. Add ghee for moin and mix.
3. Add water little by little and make neither smooth nor stiff dough.
4. Cover and keep aside for half an hour.

Filling:

1. Now take 3 boiled potatoes .
2. In a kadhai add 1 tbsp oil, add green chillies, hing and 1.5 tsp grated ginger.
3. Add boiled potatoes mash slightly.
4. Add small cubes of paneer.
5. Add turmeric powder, coriander powder, salt , black salt, red chilli powder, garam masala and chaat masala.
6. In addition to this I added roasted sauf and sesame seeds masala too after grinding.
7. Lastly add dried pudina and fresh or dried dhania.
8. Switch off and let it cool.

Assembling: ( refer to step by step pics)

Now take dough on a floored surface. And start rolling.

Trim sides and make it a rectangle ( try making it as thin as you can).

Cut horizontal stripes using pizza cutter or knife. Put masala or stuffing on it.

Try to put thin layer of stuffing.

Now roll one strip till the end ( refer to pics) .

Then overlap next layer.

Repeat till all layers are done.

Turn the roll and flatten a bit.

Now keep it in a greased cake tin. Cover and let sit till oven is preheated at 200 degrees Celsius. ( I kept this in refrigerator for around 40 minutes till I was ready to bake)

Brush milk on top and sprinkle dried pudina dhania and red chilli powder. Bake for 20 to 30.minutes till you see it turn golden brown on top.
Remove from oven , brush butter or ghee on top , sprinkle dried herbs and masalas of choice on top and wait for 5 minutes . Take outside on a plate slice and enjoy.
