Cafe Coffee Day style Honey Oats Cookie is my darling princess all time favourite. Have been trying various recipes but never got perfect outcome. Some turned out chewy , some flavourless. These have lovely caramel flavour and comes together in just 15 days. Plus needs
No maida
No creaming
No refrigeration
 
This cookie is inspired from an ANZAC kind of biscuits that are popular abroad. I discovered this recipe in May, 2019. 
I made these quite often whenever i needed to bake quick and easy. These days i avoid adding honey in baked goodies. This is mainly because as
per ayurvedic principles honey releases toxins whenever heated at high
temperatures.

INGREDIENTS
 75 grams butter roughly 3/8 cup butter
 2 tbsp honey
 3/8 cup caster sugar or powdered sugar
 1/2 cup multigrain or regular aata
 1/2 cup dessicated coconut
 1/2 rolled oats
 1/2 tsp baking soda

INSTRUCTIONS

In a large bowl , add aata, coconut , sugar mix well and keep aside.

In another vessel take butter (if using homemade butter then reduce the quantity by 1 tsp) and honey and cook on a medium flame while stirring continuously. When the butter if fully melted,add baking soda and mix nicely and remove from fire.

Pour this hot butter mix straight into the bowl of dry ingredients and add oats. Mix everything together and start making small balls of the prepared dough.

Place on a oven tray and press the balls gently. Bake in a preheated oven for 20 min at 180 degree.

The cookies are baked when they turn brown from the edges and at the bottom. Let them sit on the baking tray for a few minutes and then transfer on a wire rack for cooling. Store in air tight container once cooled.
