Coffee Cookies with whole wheat flour

Preheat oven at 190 degree for 10 minutes . The mode used is with both rods on/ toast.

Take 1/4 cup oil and 1/3 cup plus 1 tbsp more powdered sugar in it. Take hand whisk or spoon and mix well.

In another bowl add 2/3 cups of aata , 1/4 tsp baking soda , a pinch of salt and a pinch of cinnamon powder. Mix well.

his was my leftover coffee. I just added hot water to it. If u are preparing specially for the cookies than take 1.5 tsp to 2 tsp of instant coffee powder in a cup and add hot water to it. Mix well. Let it cool to room temperature. We want 1/8 cup and 1 tbsp of this diluted coffee. In tablespoons this comes out to be total 3 tbsp of coffee water. ( 1.5 tsp to 2 tsp is based on your preference of coffee. For stronger flavor use 2 tsp but some like mild flavor. In that case use 1.5 tsp of it)

Add coffee to the oil sugar mixture and mix again once.

This is the final cookie dough / batter.Take a small scoop of a tsp and fill cookie dough in it and make small balls. Or you can make it by hand too. Now roll these balls in fine grain sugar or normal sugar. Place on a baking tray.

Bake in oven at 190 degrees for 12 to 15 minutes till bottom side is golden brown. Take out of oven . Let it sit in the baking tray for 2 minutes. Transfer on a rack. Let it cool fully and store in air tight container.
