Crackers for women – Women’s Day Special

I am grateful that I am a woman. I didn't want to be anything else but a woman. I love how I multitask with ease. I love that there is a warmth in my smile. . and compassion in my heart. I like how my instinct guides me much before my mind could process things. I am grateful to be me - a woman. Happy Women's Day to all the lovely readers. 
 
Here is a small dedication from my side on the special day.
 
Crackers for Women.
 
The ingredients are hand picked for their nutritional benefits especially for Women.
 
Whole grains, millet flour
Spinach ( iron n calcium)
Tomatoes ( vit c )
Poppy seeds
Sesame seeds
Nuts
 
The idea of creating something special for women's day was on mind for last 2-3 days but somehow i was not able to find time to materialize the idea.  Moreover, i was strictly advised not to bake anything this week by hubby dear as my finger was burnt badly and he felt i needed to take rest . 
 
But the idea kept nagging my mind since i got up today. When i was waiting for a file in my office , i could not help but research on the super foods for women's health. I read a paper by WHO on adult health ,looked at a few other papers too. In the end, i could conclude that we require-
 
Whole grain and millets in our diet- fiber, minerals, protein , calcium, antioxidants
Green leafy vegetables for iron and folate
Vitamin C to absorb the iron 
Seeds and nuts for fiber, Vit B and omega 3 
 
 
and we should not indulge much in sugary food . This all prompted me to create a recipe which is nutritionally dense, Low in sugar and fat, Easy and Tasty.
 
 
Something that we can munch on whenever we are hungry or we can carry in our offices, have it with our tea and soup. 
 
I zeroed down on my ingredients based on easy availability in everyone's house and my house. 
 
I came back from office , took bath ( COvid times!!) Went straight to the kitchen . Placed the crackers in the oven and then had my cup of tea.
 
The crackers were done in no time and i gave 1 with dip to my daughter for her verdict. She gulped two more after finishing first one and it was clear this was a success.

 1/2 cup plus 1/4 cup or 85 grams of Sorghum flour or Jowar aata
 1/4 cup or 25 grams of whole wheat flour
 1 tsp salt
 1 tbsp ghee or oil
 3 tbsp finely chopped spinach
 6 tbsp of cooked tomato sauce or 3 tomatoes
 1 tsp water
 1 tbsp sweetener - Khandsari or jaggery powder
 sesame seeds
 poppy seeds
 chopped nuts- i used chopped pistachios
 herbs of choice (i used Mexican seasoning)

Preheat oven at 180 degree Celsius for 15 minutes .

Take Sorghum flour and whole wheat flour in a bowl and mix well.

Add salt and khandsari sugar and mix

Add in chopped spinach and stir.

Add dried herbs for flavour. I used mexican seasoning but dried mint/ coriander or even chaat masala can be used.

Pour ghee and mix this in flour mix

Add 4 tbsp cooked tomato puree . Actually i had a leftover from my dinner. I prepared the puree using 3 fresh tomatoes and 2 cloves of garlic. I cooked this in a spoon of oil and added salt and black pepper to it . It was cooked till the rawness of tomatoes were gone and blended in a mixer.

You can cook chopped tomatoes and then puree and use. But add in more salt in crackers if using unsalted tomato puree. See notes for more.

Add more tomato puree if required to form dough . I used 6 tbsp of tomato puree and added 1 tsp of water and brought the dough together.

Now sprinkle dry wheat flour on a surface and place the dough on it. Cover the dough with a sheet of parchment paper and roll it using belan or rolling pin.

Roll it with even thickness.

Sprinkle poppy seeds, sesame seeds and herbs on top of the rolled dough.

Roll it once more so the seeds and herbs form a beautiful top

Use sharp knife or pizza cutter and cut the crackers in the shape you like. You can use cookie cutter too.

Prepare baking tray with parchment paper and place the crackers gently on the baking tray lined with parchment paper. Use wide spatula for transferring the crackers.

Prick the crackers using toothpick or skewer

Bake in preheated oven at 180 degree Celsius with both rods on or convention mode for 20 minutes or till they are done. You will see hardening of crackers on top

Let the crackers sit on tray for 5 minutes after they are baked . Then transfer them on a wire rack for cooling . They will crisp on cooling. If the bottom is soft then bake again for 5 more minutes.

Enjoy the crisp crackers with your favorite dip or cuppa of tea or soup.

Notes-

If you dont want to add tomatoes, then add water to make these. But i think the flavour wont be great.

If you think cracker dough is crumby add wet hand or add more water little at a time to bring it together.

They become crisp on cooling. Dont overbake.

The actual baking time depends upon how thin you can roll your crackers. Since we are using jowar flour here we can not aim for very thin crackers.

    1. Will it work with any millet flour?
      Is it possible to use oats flour to replace the millet flour? This is in case I want to change the variety of flour.

      1. Dear Neeta, i tried with this flour only but i feel it should work with other millet or oats flours too.
        Only thing that needs to be factored in is rolling part. I added whole wheat in part to make the rolling easy. So if u want to add other flours in place of sorghum and keep whole wheat in the recipe then it should work . Hope it helps

  2. Thanks for this healthy recipe. My daughter tried the recipe with the below alternatives: used ragi flour instead of sorghum, white sesame instead of black and monk fruit sugar substitute instead of sugar. The dough was in the dry side so a little more water was needed. The outcome was really great crackers. Thanks again!
