Lactation Crackers

My friends’ s sister delivered a baby last week. Due to pandemic she was struck here  away from her hubby and family. Since I love to give personalized gifts especially the baked ones, I decided on sending some home baked goodies for her.

Also I wanted to make something that is healthy, nutritious and beneficial during postpartum period.

In India , laddoos or panjeeri is made traditionally with ghee and herbs in it for lactating mothers.  This helps them recover fast and also gives strength to feed the younger ones.

The food offered is generally sweet . So, I thought of making something savory .
I included all the traditional Indian herbs and spices that are given to the lactating mothers like-
Cumin seeds,
Fennel seeds,
Flaxseeds and meal,
Garlic,
Fenugreek (methi) ,
Holy basil,
sesame

And added cheese for flavor.

Since i bake with whole grains so added whole wheat flour chakki ka aata in making these .

The result in terms of taste was very good as family gulped 1/4 the of the lot. Texture wise they are soft  and crumby.

The most important thing being it was loved by the new mom.

Lactation Herb and Cheese Crackers

flavorful and chewy crackers are perfect for snacks when you want to eat healthy , light and nutritious

Yields35 Servings

 180 grams or 1.5 cup whole wheat flour
 1 tsp khandsari sugar /any other sweetener
 1 tsp rock salt
 80 grams cold butter (i used home made cow's butter) (see notes)
 168 grams or 2 cups processed or cheddar cheese ( used Britannia cheese)
 1 tbsp garlic paste
 1 tbsp holy basil / tulsi chopped ( can use dried too)
 10 grams or 1 tbsp fenugreek leaves chopped dry or fresh
 2.5 tbsp whole cumin seeds/ jeera
 1 tbsp fennel seeds/ sauf
 1.5 tbsp flaxseeds
 1 tsp sesame seeds
 2 tsp basil ( dried or fresh)
 1 tsp garlic powder (optional)
 6.5 tbsp cold milk

In a bowl, mix salt and sweetener with the whole wheat flour.

Take cumin seeds and fennel seeds in a Mortal pestle and crush them slightly. Make flax meal from 1 tbsp flax seeds.

Add 75% of crushed cumin seeds powder and flax meal in the flour mix. Save rest of the cumin seeds, mixture for sprinkling on the top.

Add in the other herbs and spices except for the garlic paste and powder , sesame seeds in the bowl and mix well.

Add cheese in the bowl and mix well.

Add chopped cold butter (I used homemade cow butter).

Rub butter into the flour–herb mixture till it resembles coarse sand.

Add in garlic paste and mix very well. You can add more garlic if you like.

Lastly add cold milk 1 tbsp at time and bring the dough together and form a ball.

Cover and refrigerate for half an hour at least.

Preheat oven at 180 degree Celsius.

Take dough out on floured surface or silicon mat and roll it using rolling pin.

Roll dough into the rectangle of uniform thickness. ( The thinner your roll, the crispier it will be.)

Take pizza cutter /sharp knife cut the rectangle into square or any other shape of choice.

Prick from center, you can poke 1-3 holes in the center .

Place them gently on a baking tray lined with parchment paper /silicon mat.

Sprinkle rest of the cumin seeds and fennel seeds powder. Also put flax seeds and sesame seeds.

Sprinkle garlic powder on the top (optional).

Press on the top gently.

Bake in preheated oven for 15-20 minutes till them golden brown form edges and bottom slightly take color on the top.

Remove from oven transfer on wire rack to cool completely.

Store in air tight container.

You can substitute butter with semi solid ghee also.

Garlic powder is optional but adds to the flavour.

This gives mild cheesy taste. Add 1/2 cup more cheese if you want sharp taste of cheese.
