Moong Dal Oats Biscuits

Gluten free. Completely free from wheat and maida.
And with mild sweetness. These are very crunchy and perfect for tea time.
Moong dal flour is also made at home using mixer.

Easy Peasy, Gluten free And delicious Moong Dal Oats Cookies

 1/2 cup moong dal aata*
 3/4 cup plus 1 tbsp oats flour ( take instant oats and blend coarsely in a mixer)
 1/4 tsp baking soda
 1/8 tsp baking powder
 1/4 cup cold butter
 1/3 cup powdered sugar
 2 tsp granulated sugar
 3tbsp plus 1 tsp cold milk

In a bowl take moong dal aata, oats aata ,baking soda, baking powder, salt , sugar and mix very well.

Add cubed cold butter to it. Now rub butter into flour so it resembles like breadcrumbs. Add cold milk 1 tbsp at time and bring the dough together without kneading.

Refrigerate it for 15 minutes. Preheat oven at 180 degree.

Take out the dough and place it in between two parchment sheets. Roll it like chapati and cut into round shape biscuits using bottle cap or cookie cutter.

Place on a baking tray lined with silver foil or parchment paper. Bake for about 12 to 15 minutes till bottom is brown in colour.

Please be careful as these are very crunchy but if baked for long these will become hard. So better to take out cookie when u see golden brown colour on bottom side.

Let cool and check. If u think it is still not crunchy then place again in otg and bake for additional 5 minutes.

Cool on a wire rack and store in air tight container.

For making moong dal aata-

Take 1.5 cup dal and rinse with water 2 to 3 time. Strain excess water. And place on kitchen towels. Let it dry completely.

I placed it in sun for an hour or so. Once it is dry pulse in mixer. It will be powderey.

Take it out and dry roast the same on a low flame for 3 to 4 minutes in a kadhai.

Once it turns aromatic turn off flame and transfer in a plate to cool completely.

Store in a air tight container.

Notes-
You can use chickpea flour in place of moong dal flour in the cookies
Fine Jaggery Powder can also be used in place of powdered sugar
