Spice Cookies with whole wheat flour, ghee and non refined sugar

A cookie with the warmth of Indian Spices paired with whole wheat flour and ghee for wholesome exotic treat !

 1/4 cup ghee ( semi solid) see notes
 1/4 cup bura shakar
 2 tbsp jaggery powder
 1 cup whole wheat flour
 2 tbsp milk
 1/4 cup moong dal aata
 1/4 tsp plus 1/8 tsp baking soda
 1/2 tsp lemon juice
 1 tsp ginger dry/ sonth
 1/4 tsp Cinnamon powder,
 1/8 tsp Nutmeg
 2 in number- Cloves
 1/2 tsp Cardamom
 1 in number -star anise
 3 in number- black peppercorns
For home made moong dal aata / gram flour
 1/2 cup moong dal/ yellow lentils

Crush the 7 spices in coarse powder. I love doing it with mortar and pestle.

Make jaggery syrup by adding 2 tbsp water with jaggery powder. Heat till jaggery is dissolved. Switch off flame and let it cool.

Preheat oven at 180 degrees Celsius for 10 minutes.

Cream ghee with sugar till light and fluffy using ladle or spatula.

Add in all the liquids - jaggery syrup, milk and lemon juice and beat well.

In another bowl, mix whole wheat flour and moong dal aata with baking soda and crushed spices. Mix well.

Add dry in wet and form a dough.

Take the dough out on a clean surface and roll using rolling pin. Place pistachios on top and roll once more.

Cut cookies using cookie cutter.

Place on a parchment lined baking tray.

Bake in oven till edges turn brown about 12 to 17 minutes in preheated oven at 180 degree Celsius.

Let it cool fully on a wire rack . Store in air tight container once cooled

For homemade moong dal aata

Wash and drain moong dal. Place it in a tray and let it dry under a fan or sunlight. Once dried fully, dry roast on a low flame for a couple of minutes. Remove and let cool. Pulse in a mixer a couple of times to obtain powder . Store in a container

Notes:-

(1) Ghee should not be in liquid form . It should be semi solid.
(2) replace moong dal aata with besan if you are not having it
(3) adjust masalas as per your liking

  1. Thanks for sharing your pictures and recipe. Great one foe vegan and diabetics. Do you know the calories for one cookie..seems within 100+ since it has ghee.
