Whole Wheat Eggless Brownie

 

Brownies are the rich fudgy treats that are everyone’s favorite! They are generally made with refined flour, eggs ,sugar & chocolate.

But for a vegetarian to have that perfect slice of rich fudgy treat is a challenge. Also when you try to make it healthier that is without refined flour it becomes trickier.

This recipe resolves the above issues well. it is perfect blend of richness indulgence without compromising on health much. We are using whole wheat flour that is regular chakki ka aata.

It is a lovely dessert to impress your guests. Also it is perfect treat for the festive season sweet cravings. So lets start with the recipe.

Important is that all the ingredients should be at room temperature. so take out milk and condensed milk from your fridge at least half an hour before using it in the recipe.

 1/2 cup or 125 ml melted butter cool see notes
 2 tbsp or 30 ml coconut oil
 3/4 cup or 105 grams brown sugar blended in powdered form
 1/4 cup or 74 grams condensed milk i have used homemade
 1/4 cup or 60 grams milk
 125 grams dark chocolate chopped into pieces or 1/2 cup or 125 ml melted dark chocolate i used Amul Dark Chocolate see notes
 1/4 tsp vanilla extract
 3/4 cup or 93 grams whole wheat flour or aata
 1/4 cup or 19 grams cocoa powder
 1/2 tsp Baking Powder
 a pinch of salt
 2 tbsp or 23 grams walnuts chopped
 1 tbsp choco chips or cocoa nibs see notes
 Instructions

INSTRUCTIONS
1

Take 120 grams chopped chocolate and place it in a microwave safe bowl. Melt it in microwave for 15 seconds . take it out and stir using clean and dry spoon. if it is not melted fully , place it back in the microwave and melt for another 15 seconds, take out ans stir till melted. Repeat for another 10 seconds interval till chocolate is fully melted. Be careful with this step as chocolate tends to burn quickly so melt it at 15 seconds interval only. Once melted, keep aside till it comes back to room temperature. This will give 1/2 cup that is 125 ml of melted cooled chocolate for this.

Preheat oven at 175 degree Celsius for 15 minutes . Keep both rods on or convention mode

Take a square baking tin , grease it well with oil. Place a parchment paper at its bottom and grease the sides well. Keep aside

In a big bowl, take melted butter , coconut oil and add powdered brown sugar to it. whisk it well till incorporated.

Now add condensed milk and mix well again.

add in melted chocolate and mix well. Keep aside . This will be our wet ingredients.

In another bowl, take whole wheat flour and add baking powder, cocoa powder, salt to it . Mix it well. This is our dry ingredients

Now, mix dry ingredients with the wet ingredients.

Add in vanilla extract and milk

Mix it using a whisk for 15 to 20 seconds till no dry flour is visible and the batter is smooth.

Lastly, fold in half the quantity of walnuts and choco chipc/nibs to the batter.

Pour this batter into the well-greased prepared tin and level it using spatula

Tap a couple of times on the counter

Sprinkle rest of the nuts and choco chips/ nibs on top

Bake in a preheated oven for 30 to 35 minutes till toothpick inserted in the centre of the Brownie comes out clean or with a very few crumbs.(see notes)

Let the Brownie cool in Pan for 30 minutes or so. Once cool, take it out of the pan

let cool fully about an hour.

Cut into slices and serve the fudgy rich treat

i am using homemade unsalted butter, if you are using salted butter then omit salt from the recipe

Any baking chocolate or regular milk chocolate can be used in the recipe

* the chocolate should be melted carefully. It should be kept in a clean dry bowl and stirred frequently using dry spoon or spatula and should not be heated directly on flame as it tends to burn easily.

You can melt the chocolate using double boiler where you place a vessel with water on medium flame and place a bigger glass bowl on top of the vessel such that water doesn't touch the bottom of the glass bowl. and melt the chocolate in the glass bowl (using steam of the water beneath) while stirring continuously.

*You can Replace choco chips with chopped chocolate too.

*Every oven behaves differently . so baking time varies with oven. Start checking the brownie for doneness around 25 minutes if your oven is fast.

*It is important to cool the Brownie fully and then slicing it. If you dig into it when warm it might be crumby. You can warm the brownie in microwave once it is fully cooled and sliced well.

*Feel Free to replace brown sugar with powdered white sugar if you are not having brown sugar.
