Whole Wheat Vegetable Pie

I love Pies! The gorgeous, beautiful ones with laces, flowers, hearts and what not.

I love the combination of textures also, the flaky crisp exterior with a creamy soft filling. Although I never had a chance of savouring much of it as due to my and my hubby’s work compulsions we are always posted in the field which means away from the cities.

 

 

 

 

 

 

So pies are a rare commodity for us . I remember when I was very young, our neighbor did a fancy bakery course and she made pies one day. I was so much in awe of that lady! I could not imagine how a fancy looking exotic thing can be made at home. Years passed and I developed interest in baking. I tried baking many things with healthy ingredients. I made tarts and pies a few times but it was always from some leftover dough of cookies or mathri. But somehow baking a proper pie or tart never happened. May be I was too intimidated by the texture that I felt couldnot be replicated at home with whole wheat flour. It so happened that I had leftovers form the pasta made a day before. I mean I had sautéed vegetables like bell peppers, broccoli, onions, garlic and I had some extra white sauce in my refrigerator. I just felt that It could make a lovely pie filling and asked hubby dear if he would like to have one. He told me to show him a pic of what I was thinking. I showed him one of the lattice pie pictures online and told it would be something of this sort but savoury and less flaky (as I assumed it s going to be with whole wheat so it would be less flaky) and less beautiful as I am not that skilled. He agreed and in fact was eager to try something new. So I made the dough using whole wheat flour which was super easy ( I wonder why I never tried pie before). I placed my dough in fridge for chilling. After an hour, I assembled the pie by puring the filling inside the crust. After that whatever dough was left, I used in making laces and some cut outs. I made a couple of braids with the narrow laces and placed the wider laces randomly . To complete the look I placed the cut out flowers from the dough randlomly. I was thrilled with the design . It was so pretty to look at even before it was baked. But real experience started once the pie was out of oven . Altough I underestimated baking time and we had to wait for our dinner till it was baked but it was all worth it. The pie crust was just perfect ! I mean the texture could not have been better. The crust was flaky, crispy but not hard and the inside was creamy veggies. We loved it a lot. So now I will be making different fillings in it and it is going to be a regular in our house. Hope you guys give this a try and it the top design looks like a lot of work , you can leave it out and just bake the crust with the filling.

Ingredients
 For the Pie Crust
 165 grams whole wheat flour
 70 grams butter ( I used home made butter)
 5 to 6 tbsp cold water
 1/4 tsp salt
For the Vegetable Filling
 2 to 3 tbsp oil/ butter or ghee
 1 yellow bell pepper ( chopped)
 1/2 red bell pepper ( chopped)
 1 capsicum ( chopped)
 1 onion ( chopped)
 3 tbsp garlic finely chopped
 1 head of broccoli ( cut into pieces)
 1.5 carrots( chopped)
 1 to 1.5 cup milk
 2 cheese slices or 2 cubes processed cheese( optional)
 1/2 tsp salt
 2 tsp herbs - oregano, basil or any other herbs of choice
 1 tbsp oats flour or refined flour or whole wheat flour

Directions
For pie crust-
1

In a bowl, take whole wheat flour and salt mix well.

Add in cubed cold butter to the flour and rub using finger tips.

It should resemble like coarse sand / bread crumbs.

Add in cold water little by little and bring the dough together. Do not knead the dough. Just bring it together. Form two balls of the dough. Cover and refrigerate for an hour at least.

for vegetable filling -

Chop all the vegetables.

In a wok, take 2 tbsp oil, add chopped garlic saute for a few seconds , now add in broccoli, carrot and bell peppers. Saute on high flame for a couple of minutes. Add in salt and black pepper , white pepper. Switch off the flame.

In another wok, take butter or oil add in 1 tbsp oats flour or maida or whole wheat flour and let it roast on a low flame for around 5 minutes or till fragrant. Keep stirring the flour.

Now add milk to it and mix well. You can use whisk to prevent lumps from forming.

Let cook on a low flame for 10 to 15 minutes while stirring continuously. Add in salt and pepper.

Now add in processed cheese or cheese slices to the sauce. Let it melt fully on a low flame. Switch off the gas.

Add sautéed veggies to the white sauce we prepared and add mix herbs, basil or any other seasonings and herbs of choice. Adjust salt to taste.

for assembling-

Now take one ball of chilled dough from the refrigerator .

On a lightly floured surface or a silicon mat, roll the dough using rolling pin into a big circle.

Place the circle in a pie pan with the help of rolling pin. Be gentle while placing.

Remove the excess from the edges using scissors from the side of pie pan. You can use spring form pan or glass / borosil pan also for the same.

Keep the pie pan in refrigerator to chill. It is important that the pie dough should be cold for flakiness.

Now take another ball of dough from the refrigerator and make a square using rolling pin.

Now take pizza cutter and cut the dough into long wide stripes. Also cut the dough into narrow stripes too. You can make 6 narrow stripes and 6 long stripes

Make braids using 3 narrow stripes of dough. Place on parchement paper lined plate and refrigerate. Repeat the step for making braid with other narrow stripes.

Now roll the excess dough once more and using cutters cut small flowers or any other design. Place it along the stripes in the refrigerator

Take the pie pan outside and place vegetable filling inside the pie.

Place the braids and vertical stripes on top carefully to make lattice pattern. Place the flowers randomly to create a pattern.Seal from the edges .

Brush the top with milk and refrigerate once again.

In the meantime, preheat the oven at 200 degree C in convention mode or both rods on.

Once the pie is chilled for 15 minutes, place the pan in the preheated oven in the medium rack and bake for 20 minutes. After 20 minutes reduce the temperature to 190 degree Celsius and bake for another 20 to 30 minutes. Or till it takes brown colour from the top as well as the edges. It took around an hour in my oven to bake to perfection.

Remove from oven . Brush oil or butter on top. This step is optional but it like the glossy top.

Let cool for a few minutes. Slice and serve it hot.
